Ingredients

  • 1kg prawn (peeled, reserve heads and shells)
  • 2 medium squid (cleaned and sliced)
  • 200g pork belly (poached in 4 slices of ginger, sliced into strips)
  • 2 fish cake (sliced)
  • 600g yellow noodles
  • 300g thick rice vermicelli
  • 300g thin rice vermicelli
  • 6 tbsp pork lard
  • 4 eggs (beaten)
  • 4 tbsp minced garlic
  • 1 cup bean shoots
  • 4 tsp light soy sauce
  • 2 tsp dark soy sauce
  • Spring onions (for garnish)
  • Coriander (for garnish)
  • 1kg prawn heads and shells
  • 1kg pork bone
  • 3 cloves garlic (sliced)
  • 3 shallots (sliced)
  • 2 tbsp oil
  • 2L boiling water
  • 1 tbsp white pepper
  • 80g dried anchovies
  • 30g rock sugar
  • 1 tbsp fish sauce
