Ingredients

• 2 pounds ground beef
• 2 shallots (or 1 red onion), chopped
• 4 cloves garlic, chopped
• 3 tablespoons Gefen BBQ Sauce
• 3 pounds yuca (cassava)
• 1/2 a red pepper
• 1 tablespoon garlic powder
• 2 teaspoons paprika
• 1 cup parsley, cleaned and chopped
• 1/2 teaspoon salt
• 1 egg
• 2 tablespoons Gefen Tapioca Starch, plus an additional 1/2 cup for assembly (you can make this year-round using flour)
• beaten egg, for brushing
