"Hungarian" Beef Goulash with Sauerkraut - Wine4Food
The Hungarian gulyas/goulash was originally a soup, and the American version is almost always a stew. But this is the most authentic goulash I've tasted.
Ingredients
- 2 1/4 pounds beef chuck, cut into 2″ cubes
- 1/2 cup all-purpose flour
- 6 tablespoons vegetable oil
- 3 small yellow onions, thinly sliced
- 4 large cloves garlic, finely chopped
- 2 tablespoons hot Hungarian paprika (or you can substitute a blend of supermarket paprika and cayenne pepper)
- 2 1/4 cups chicken broth
- 3/4 cup white wine
- 1/4 cup tomato purée
- 1 teaspoon caraway seeds
- 2 tablespoons sour cream, plus more for garnish
- 4 1/2 cups sauerkraut
