Ingredients

• 1/2 pkg Deep Dish Pie Shells, thawed according to package directions 170 g
• 1 tsp canola oil 15 mL
• 1 leek, chopped (white and light green parts only)
• 2 cups sliced mushrooms 500 mL
• 1/2 tsp each salt and pepper 2 mL
• 4 eggs
• 1 cup 2% milk 250 mL
• 2 tsp fresh thyme 10 mL
• 3/4 cup shredded Swiss cheese 175 mL
