• 1 onion, chopped
• 1 package spinach, frozen, chopped (10-oz pkg.)
• 6 eggs, beaten
• 2 cups mozzarella cheese, shredded
• 1 cup sharp cheddar cheese, shredded
• 1/2 to 1 tsp. garlic powder
• 1/4 tsp. salt
• 1/8 tsp. ground black pepper
• 1/8 tsp. cayenne pepper
• 1 tomato, thinly sliced
