Oat Coated Chicken Nuggets with Sweet Potato Wedges | White's Oats

Ingredients

• 3-4 large sweet potatoes, rinsed
• 2 tsp. cajun seasoning
• 1tbsp. olive oil
• 4 boned and skinned chicken breasts, chopped into 5cm chunks
• 2 eggs, lightly beaten
• 3 tbsp. plain flour
• pinch of salt
• 1/2 tsp. black pepper
• 200g White's Jumbo Organic Oats
• 3 tbsp. olive oil
• 1/2 savoy cabbage
• 1/2 red cabbage
• 3 large carrots
• 30ml olive oil
• Juice of 1 lemon
• 1 garlic clove, crushed
• handful of fresh parsley, finely chopped
• 2 tsp. mustard
• salt & pepper
