Mortadella Pizzas in the Pizza Oven | RICARDO

Ingredients

• 1/3 cup (75 ml) olive oil
• 3 tbsp fresh Parmesan cheese, grated
• 4 garlic cloves, finely chopped
• 2 tsp rosemary, finely chopped
• 1/2 tsp red pepper flakes
• 4 balls pizza dough (by hand)
• 1 cup (250 ml) ricotta cheese, at room temperature
• 2 cups (50 g) arugula or Boston lettuce
• 1/2 lb (225 g) pistachio mortadella, thinly sliced (see note)
• 1/4 cup (35 g) unsalted shelled pistachios, chopped
• 1 lemon, zest finely grated
• Fleur de sel
