These Thai Stir Fried Vegetables are a quick and healthy meal for busy people on the go. Easy to make and full of lightly cooked, nutritious vegetables.
Ingredients
- 1 1/2 tbsp coconut oil (#)
- 1 tbsp garlic (finely chopped #)
- 2 ozs corn, baby (#)
- 3 ozs vegetables, mixed (cauliflower, broccoli, kale, asparagus, brussel sprouts)
- 2 ozs carrot (small)
- 3 ozs mushroom, fresh (rice straw, champignon, Chinese, shiitake #)
- 2 ozs peas, sugar snap (#)
- 1/2 cup chicken stock (or veggie stock, click on ingredient for recipe, )
- 1 tbsp tamari (soy) sauce (if paleo use more fish sauce #)
- 1/2 tbsp fish sauce (vegetarians can use more soy #)
- 2 tbsp oyster sauce (vegetarians can use mushroom-based oyster sauce#)
- 1 tsp palm sugar (or raw sugar, optional #)
- 3 ozs tomato
