Thai Stir Fried Vegetables

- 2-3 cups baby bok choy (chopped)
- 1/4 cup onion (finely chopped)

- 1 piece of ginger (thumb-size, sliced into thin matchstick pieces)
- 1/4 to 1/2 teaspoon chili flakes
- 2 medium carrots (sliced)
- 1 bunch broccolini (chopped)
- 5 to 6 shiitake mushrooms (sliced or left in halves or quarters)
- 1 red or yellow bell pepper (sliced into strips)
- handful of bean sprouts
- 1 handful fresh Thai basil (chopped)
- 1 cup cashews (optional or can substitute tofu, cooked shrimp, sliced chicken)
- 2/3 cup coconut milk
- 2 1/2 tablespoons fish sauce or soy sauce
- 1 tablespoon fresh lime juice
- 1 1/2 teaspoons brown sugar
