Ingredients

• 21/2 cups (625 ml) unbleached all-purpose flour
• 1 tablespoon (15 ml) baking powder
• 1/2 teaspoon (2.5 ml) baking soda
• 1/2 teaspoon (2.5 ml) salt
• 2 eggs
• 1 cup (250 ml) sugar
• 2 tablespoon (30 ml) unsalted butter, melted and cooled
• 3/4 cup (180 ml) plain mashed Russet potatoes, cooled
• Shortening or canola oil, for frying
• 1 cup (250 ml) maple syrup
