Mexican Quesadilla | Rafferty's Garden

Ingredients

• 1x tbsp of olive oil plus extra for brushing
• 1x small sweet potato, peeled and grated
• 1/2 tsp paprika
• 1/4 tsp cumin
• 2x Rafferty's Garden Chickpea, Corn & Carrot
• 1/2 cup of canned blacked beans, rinsed and drained
• 1/2 cup of canned corn, rinsed and drained
• 2x cups of chopped baby spinach
• 2x tbsp of fresh parsley, chopped
• 6x whole grain tortillas or whole grain mini wraps
• 1x cup of grated cheddar or mozzarella cheese
