• 2 yellow apples, cored and each cut into 12 wedges
• 1 leek, diced
• 2 tablespoons (30 ml) butter
• 1/2 cup (125 ml) white wine
• Salt and pepper
• 8 cloves garlic, peeled and halved
• 12 fresh sage leaves
• 1/4 cup (60 ml) butter
• 4 pork chops, about 1-inch (2.5-cm) thick with the bone, fat removed
• 1 tablespoon (15 ml) all-purpose flour
• 1 can 10 oz (284 ml) concentrated chicken broth
• 1 teaspoon (5 ml) dry mustard
