Carrot Cake with Cream Cheese Frosting – Shire's

Ingredients

• 2 cups white sugar
• 1 ½ cups vegetable oil
• ¾ unsweetened applesauce
• 4 tsp. vanilla
• 2 ¼ cup all-purpose flour
• 1 - 8 oz. can crushed pineapple (drained)
• 3 cups shredded carrots (coarsely chopped)
• 2 cups sweetened coconut
• 1 cup chopped walnuts
• 2 tsp. cinnamon
• 2 tsp. baking soda
• 2 tsp. baking powder
• 1 tsp. salt
• ¼ tsp. nutmeg
• 1 ¼ cups softened plant-based butter (use sticks – not spread)
• 2 - 6 oz. containers Shire’s Cream Cheese
• 1 cup confectioner’s sugar
