I have never eaten this at the "Olive Garden" so I don't know if this is their recipe. However, this is a nice take on eggplant parmiagiana
Ingredients
- 1 eggplant, peeled and cut into 1/4-inch slices
- flour, for dusting
- oil, for frying
- seasoning salt, to taste
- 1 (16 ounce) jar prego spaghetti sauce with meat
- 1/4 cup grape jelly
- 1 (14 ounce) can sliced-style stewed tomatoes
- 4 slices mozzarella cheese
- parmesan cheese, to season flour
