• 1 Onion (quartered)
• 1 Bouquet garni
• 1 tsp Peppercorns
• 2 floz Olive oil
• 1 Leek (white part only, chopped)
• 2 Garlic cloves (crushed)
• 1 Green pepper (pith and seeds removed and finely chopped)
• 4 oz Serrano ham (chopped)
• 4 Tomatoes (blanched, peeled, seeded and chopped)
