• 1 ¾ cups Green Lentils, rinsed
• 2 1/2 cups chicken stock, or vegetable stock
• 3 cups Water
• 1 Tbsp Tomato Paste
• 4 slices bacon, cut into 1/4 inch sticks - optional
• 1 medium Red Onion, small diced
• 2 large carrot, small diced
• 2 celery rib, large small diced
• 1-2 Tbsp Fresh Thyme, minced
• 2 Tbsp Sherry Vinegar
• 3 garlic cloves, minced
• ¼ cup Parsley, minced
• To taste Salt & Pepper
• 2 cup arugula
