Name: Upside-down spiced apricot cake
Ingredients: 300g caster sugar; 200 g unsalted butter, softened, plus extra to grease; 3 tbsp spiced rum or orange juice; 8-10 apricots, halved; 3 medium eggs, beaten; 1 tsp vanilla extract; Finely grated zest of 1/2 orange; 150 g plain flour; 100 g ground almonds; 2 tsp baking powder; 1 tsp ground cardamom; 120 g crème fraiche; 1-2 tbsp whole milk, if needed; 1 tbsp toasted flaked almonds, optional; You will also need: 20 cm fixed-base square cake tin, lightly greased and lined with baking paper
