Ingredients

• 1/4 cup unsalted butter
• 2 leeks, thinly sliced, or 2 1/2 cups
• 1/4 cup flour
• 2 cups whole milk, room temp
• 6 ounces cheddar cheese, grated, divided
• 1 1/2 teaspoons salt, more to taste
• 1/4 teaspoon, pepper
• 4-5 hardboiled eggs, sliced in half
