• Two packages of frozen puff pastry sheets
• 6 slices of bacon, cut into ¼ inch pieces
• 3 tablespoons unsalted butter
• 2 leeks (white parts only), thinly sliced
• ½ small red onion, cut into ¼ inch dice
• 2 greens onions, thinly sliced
• ¼ teaspoon freshly ground black pepper
• Kosher salt
• 1 pound shredded cooked chicken breast. You can either use store bought rotisserie chicken or pre-cook and shred chicken breast before beginning this recipe.
• 4 tablespoons (½ stick) unsalted butter
• ¼ cup of all-purpose flour
• 2½ cups whole milk, warmed
• ½ teaspoon kosher salt
• ¼ teaspoon ground nutmeg
• Flour, for the work surface
• Kosher salt and black pepper
• 1 large egg, whisked
• 1 tablespoon thinly sliced green onion, for garnish
