Country Sausage Dressing from the Kitchen at Emory Cottage

Ingredients

• 7 cups French bread cut into coarse crumbs
• 3 cups crumbled cornbread
• 1/2 cup Italian-style bread crumbs
• 1 lb. mild pork sausage
• 3-4 ribs of celery, sliced crosswise
• a large sweet onion, diced
• 4 cups chicken or turkey stock or broth, divided
• 1 tsp black pepper
• 1/4 tsp marjoram
• 1/4 tsp thyme
• salt to taste
• 1/2 cup sweet cream
• 2 eggs
