Ingredients

• 2 lbs ground Ontario veal
• ½ cup panko breadcrumbs
• 1 cup parmesan cheese, grated
• 3 tbsp parsley, chopped
• 3 cloves garlic, grated
• 1 lemon, zested
• 1 tbsp kosher salt
• ½ tsp ground black pepper
• 1 egg yolk
• ½ onion, diced very small
