Steak, Patagonian Potatoes and Chimichurri (a la Francis Mallman) | The Perennial Plate
This is the best thing I ate in Argentina. It was at Francis Mallman's 1884 restaurant and it was amazing! So, this is a pretty direct copy of that. Or, my guess at how those things were made....
Ingredients
- 1.0 cup parsley
- 0.5 cup oregano
- 2.0 whole clove
- 1.0 teaspoon chili
- 0.25 cup olive oil
- 0.25 cup red wine vinegar
- 1.0 whole russet potato
- 2.0 tablespoons clarified butter
