• 2.5 lbs Chicken, whole legs or thighs, bone-in. See Note 2.
• 1/2 Cup Olives, pitted, mixed Spanish olives
• 1/4 Cup White Wine
• 3-4 tbsp Brown Sugar, light brown sugar
• 1/4 Cup Chicken Stock
• 1/2 Cup Dried Prunes, 6-8 pitted prunes
• 2 tbsp Capers, plus a tsp juice
• 3 tbsp Olive Oil
• 3 tbsp Red Wine Vinegar
• 1 tbsp Oregano, dried
• 1.5 tbsp Garlic, 6-7 cloves, grated or pureed
• 2 Bay Leaf
• 1 tsp Salt and Black Pepper, 1/2 tsp salt and 1/2 tsp black pepper
• 2-3 tbsp Fresh Herbs, parsley or cilantro, fine chopped
