• 500 g Woolworths pappardelle pasta
• 3 T olive oil/ghee
• 150 g onion, finely chopped
• 1 T fresh garlic, minced
• 1 T fresh turmeric, minced
• 1 T smoked paprika
• 1 t smoked chilli flakes (or to taste)
• 50 g raw walnuts, roughly chopped
• 200 g cauliflower florets, chopped
• 250 g sliced Portabellini mushrooms, sliced
• ½ cup vegetable stock
• 1 cup fresh whipping cream
• 80 g baby spinach
• sea salt and freshly ground black pepper, to taste
• 30 g hard cheese, grated
• microgreens, to garnish (optional)
• crispy fried bacon, to garnish (optional)
