Mini Christmas cakes

Ingredients

• 750 gram dried mixed fruit
• 1/3 cup brandy (or sherry)
• 225 gram butter, softened
• 1 1/3 cup brown sugar (loosely packed)
• 4 eggs, room temperature
• 2 tablespoon marmalade
• 1/2 teaspoon vanilla essence
• 1/2 teaspoon almond essence
• 2 cup flour
• 1/2 teaspoon ground cinnamon
• 1/2 teaspoon mixed spice
• 1/4 teaspoon baking soda
• To decorate
• 1/2 cup apricot jam plus 1-2 tablespoons water
• 2 - 3 x 750g packets prepared fondant (or combination of fondant and marzipan)
• icing sugar to dust
