Ingredients

• 1 tablespoon of olive oil
• 1 chopped onion
• 2 cloves of minced garlic
• 1 pound of peeled and roughly chopped parsnip
• 2 medium peeled and chopped potato
• 4 cups of vegetable broth
• 1/2 teaspoon of salt
• 1/4 teaspoon of black pepper
• 1 teaspoon of oregano
• 1/2 cup of heavy cream
