Ingredients
- 1 whole white-fleshed fish (such as snapper, sea bream or seabass, gutted but not scaled, weighing about 1-1.5kg)
- 500g of salt (course)
- 2 tbsp of all-purpose flour
- 1 tbsp water
- 2-3 stalks lemongrass (bruised)
- A handful of kaffir lime leaves (roughly chopped)
- 6 tbsp fresh lime juice
- 3 tbsp water (according to taste)
- 2 tbsp fish sauce
- 1 tbsp sugar
- ½ tsp salt
- 15 cloves of garlic
- 20 bird’s eye chilies
- Barbecue grill / oven
