Ingredients

  • 1 whole white-fleshed fish (such as snapper, sea bream or seabass, gutted but not scaled, weighing about 1-1.5kg)
  • 500g of salt (course)
  • 2 tbsp of all-purpose flour
  • 1 tbsp water
  • 2-3 stalks lemongrass (bruised)
  • A handful of kaffir lime leaves (roughly chopped)
  • 6 tbsp fresh lime juice
  • 3 tbsp water (according to taste)
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • ½ tsp salt
  • 15 cloves of garlic
  • 20 bird’s eye chilies
  • Barbecue grill / oven
