Ingredients

  • 1.3kg beef brisket point end, (the fatty end)
  • cider vinegar, or apple juice, in a spray bottle
  • 1 tbsp of black peppercorns
  • 1 tbsp of flaky sea salt
  • 1 tbsp of dark brown sugar
  • 1/2 tsp paprika
  • 1/2 tsp chilli powder
  • 1 tsp garlic granules
  • 1 tsp onion granules
  • 450g of ketchup
  • 70g of dark brown sugar
  • 70ml of cider vinegar
  • 1 tbsp of Worcestershire sauce
  • 1 tsp celery salt
  • 1/2 tsp cracked black pepper
  • 1/2 tsp smoked paprika
  • 1/4 tsp Tabasco
  • lemon juice, to taste
  • cayenne pepper, to taste
