Ukrainian Sausage Casserole - Salamanca Fresh

Ingredients

• 1 tbsp olive oil
• 1 cup onion, diced
• 1 cup red capsicum, diced
• 1 cup celery, chopped
• 3 garlic cloves
• 1 Ziggys Ukrainian Smoked Sausage, chopped into rounds and halved again
• 2 cups sauerkraut, drained
• 3/4 cup white wine
• 1 tsp thyme, dried
• 1/2 tsp ground black pepper
• 1 cup plain Greek yoghurt
• 6 cups mashed potato
• 2 cups grated cheddar cheese
