• 600 ml water
• 1 tsp coarse salt
• 250 g coarse bulgur (3 dl)
• 1 can of chickpeas in brine (approx. 400 g)
• 100 g dried apricots, in small cubes
• 300 g snap peas, in halves
• 300 g thawed, frozen extra fine peas
• 50 g toasted pine nuts
• 200 g white cheese cubes in brine 3%
• 3 dl flat-leaf parsley, coarsely chopped
• 1 tbsp olive oil
• 1 tbsp lemon zest (unwaxed), finely grated
• 3 tbsp lemon juice, freshly squeezed
• Freshly churned pepper
