Ingredients

• 3 lbs meaty short ribs
• 1 red onion - chopped
• 1 fennel bulb - chopped
• 1 carrot - chopped
• 2 garlic cloves - chopped
• 1 ½ cups Duckhorn red wine
• 2 cups chicken stock
• 2 Tbsp tomato paste
• 1 rosemary sprig - chopped
• 2 bay leaf
• 1 star anise
• 1 cup dried cherries
• Orange zest - one 3 inch piece
• Olive oil
• Salt and pepper
