Ingredients

  • 3 bottles clam juice (8 oz. each )
  • 1 cup vegetable broth
  • 12 oz. large shrimp, peeled and deveined (shells reserved)
  • 4 Tbsp. olive oil, divided
  • ½ cup bread cubes
  • 6 garlic cloves, smashed
  • ½ cup slivered almonds
  • ¼ cup chopped fresh parsley
  • Pinch of saffron threads
  • 1 leek, diced (white and light green parts only)
  • 2 Tbsp. olive oil
  • ½ cup diced carrot
  • ⅓ cup diced celery
  • ½ tsp. dried thyme
  • 2 dried bay leaves
  • 2 tsp. minced fresh garlic
  • 2 Tbsp. tomato paste
  • ⅓ cup dry white wine
  • 3 cans diced tomatoes (14.5 oz. each ), drained
  • 2 lb. fresh seafood (mixture of cod, halibut, or sea bass cut into 2-inch pieces, or assorted shellfish)
  • Salt and black pepper to taste
  • 1 cup heavy cream
  • 6 cloves garlic, sliced
  • Zest of 1 orange
