Potato and Cheese Croquettes

Ingredients

• 650 g potatoes peeled, steamed and mashed
• 1 tsp ground cumin
• 1 tsp ground coriander
• 3 tbsp roasted red peppers finely chopped
• 1 tbsp lemon zest grated
• 1 cup mixed herbs coriander and mint, finely chopped
• 1 garlic clove crushed
• 100 g Puck® Premium Feta Cheese crumbled
• 1 salt
• 1 bell pepper
• 1 cup flour seasoned with salt and pepper
• 2 eggs lightly beaten
• 1 cup breadcrumbs
• 1 vegetable oil for frying
• 1 tomato relish to serve
