• 3/4 pound sweet Italian sausage, casings removed
• 3/4 pound rigatoni
• 1/4 pound spinach, chopped
• 2 tablespoons grated Parmesan cheese
• 2 tablespoons Bellwether Farms ricotta cheese
• 1 tablespoon chopped fresh flat-leaf parsley
