• 2 ears of fresh corn, kernels cut off
• 1 cup heavy cream
• 3 large eggs
• 6 scallions, chopped, divided
• 1 cup shredded sharp cheddar cheese, divided
• 1/2 cup Panko breadcrumbs
• 1 tsp. chopped fresh thyme
• 1/2 tsp. paprika
• dash of cayenne pepper
