• 10 pounds of chicken (leg quarters)---clean, season heavily and put to boil
• 3 boxes Jiffy cornbread mix--fix according to directions in two 9x13 pans
• Bread Crumbs(optional)
• 1/2 can cream of chicken
• 1 Can Cream of Celery
• 1 cup of milk
• 3 eggs
• 3 onions chopped
• 1 bell pepper chopped
• 1/3 bunch parsley chopped
• 1-1/2 celery stalks chopped
• Cajun Seasoning
