Panzanella with Tuna - Rio Mare Canada

Ingredients

• 1 loaf of day-old country-style bread
• 2 tomatoes, thinly sliced
• 1 white onion, thinly sliced
• 4 radishes, thinly sliced
• 1 celery stalk, thinly sliced
• 1 handful of fresh basil leaves, roughly torn, plus extra for garnish
• salt and pepper
• 2 tbsps red wine vinegar
• 4 tbsps extra-virgin olive oil
• 2 x 160g Rio Mare Solid Light Tuna in Water drained
