Lion's Mane Crab-less Toast "Puffs" – Circular Farm

Ingredients

• 1 medium baguette
• Olive oil
• 2 tablespoons unsalted butter
• 1 small garlic clove, grated
• 2 cups shredded and finely chopped lions mane mushrooms
• 1/2 teaspoon salt
• 2 tablespoons water
• 1/2 cup whipped cream cheese
• 1/4 cup mayonnaise (Japanese Kewpie mayonnaise is wonderful if you can find it!)
• 1 tsp fresh lemon juice
• 1/4 teaspoon black pepper
• 2 tablespoons finely chopped roasted red bell pepper
• 1 scallion, finely chopped
• 1/2 plus 1/4 cup grated gruyere cheese
• Chopped scallions or parsley for garnish
