Ingredients

• 4 X 150g redfish fillets
• 2 tbsp plain flour
• 70ml extra virgin olive oil (plus extra to drizzle)
• 1 onion (thinly sliced)
• 2 crushed garlic cloves
• 1 carrot (thinly sliced)
• 1 tsp tomato puree
• 400g can chopped tomatoes
• 1 bay leaf
• 125ml dry white wine
• 1/2 lemon
• chopped flat-leaf parsley, to serve
• lemon wedges (to serve)
