Hash Brown Crust Asparagus Tart | The Fancy Pants Kitchen

• 4 medium baking potatoes about 2 pounds, peeled
• 1 tsp kosher salt
• 1/2 tsp freshly ground black pepper
• 2 tbsp vegetable oil
• 2 tbsp butter
• 1 tbsp butter
• 4 medium shallots thinly sliced
• 6 large eggs room temperature
• 1 & 1/4 cups half-and-half cream
• 1/2 tsp salt
• 1/4 tsp freshly ground pepper
• 1 tsp mustard powder
• Pinch of grated nutmeg
• 2 – 2 & 1/2 cups (approx 10 ounces) old white cheddar cheese, grated
• 1/2 bunch asparagus (about 1/2 pound), ends trimmed
• Optional: chives for topping
