• 16-32g vegan icing sugar
• 1/2 tsp vanilla extract
• For the Shortcakes:
• 90ml coconut oil
• 205ml coconut milk
• 200g all-purpose flour, plus more for dusting
• 25g vegan sugar
• 12g baking powder
• 1/4 tsp baking soda
• 1/2 tsp kosher salt
• 1/2 tsp apple cider or white vinegar
• 1/4 tsp coconut extract
• For a Garnish:
• 300-450g sliced of quartered strawberries
