Ingredients

• 1 tbsp sesame seeds
• 1 ½ tbsp curry paste
• ½ tsp black pepper
• 1 tbsp coconut oil
• 1 14 oz can strained tomatoes
• 2 tbsp fresh parsley, chopped
• 2 small carrots, chopped
• 2 cloves garlic, minced
• 1 ½ cups beluga lentils, rinsed and drained
• 1 medium onion, chopped
• 1 medium sweet potato, peeled and cubed
• 2 tbsp lime juice
• 3 tbsp non-dairy yogurt
• 2 cups fresh baby spinach
• 2 ⅓ cup vegetable broth
• 1 ½ tsp salt
• 1 tbsp ginger, minced
• 1 14 oz can coconut milk
