Ingredients

• 1 lb (450g) lean ground beef
• 1 onion, chopped
• 1 jalapeño pepper, seeded and finely chopped
• 3 tbsp chili powder
• 1/2 tsp (2.5 ml) ground cumin
• 3 tbsp (45 ml) olive oil
• 1 tbsp brown sugar
• 1 tbsp cocoa powder
• 2 garlic cloves, finely chopped
• 1 cup (250 ml) coffee (or beer, to taste)
• 1/2 cup (125 ml) chicken broth
• 1 can (19 oz/540 ml) kidney beans, rinsed and drained
• 1 can (14 oz/398 ml) diced tomatoes
• 3/4 cup (120 g) fine cornmeal
• 1/2 cup (75 g) unbleached all-purpose flour
• 1 tsp sugar
• 1 tsp baking powder
• 1/4 tsp salt
• 1/4 cup (55 g) cold butter, diced
• 3/4 cup (180 ml) milk
• ¾ cup (75 g) sharp orange cheddar, grated
• 1 egg
