Sweet pepper gazpacho - FAB

Ingredients

• 2 red peppers
• ½ small red onion, chopped
• 700g/1½lb ripe tomatoes, peeled and chopped
• ½ cucumber, chopped
• 2 cloves of garlic, crushed
• 200g/7oz breadcrumbs made from Ciabatta or Country Bread
• 4tbsp olive oil
• 1tsp white wine vinegar
• 600ml/1pt tomato Juice
• 300ml/½ water
• small handful basil leaves
• salt and pepper
