Caribbean Vegetable Stew Recipe

Ingredients

• 1/3 Cup Water
• 1 Large Onion, chopped
• 1 Bell pepper, chopped (red or green)
• 3 Cups Sweet potato, peeled and cubed
• 15 Ounces Can Tomato sauce
• 15 Ounces Can Diced tomatoes with jalapeno peppers
• 20 Ounces Can Pineapple chunks with juice
• 2 Cups Green apples (unpeeled), chopped
• 4 Ounces Can Green chilies, chopped
• 1/2 Cup Vegetable broth
• 15 Ounces Can Pinto beans, drained and rinsed
• 15 Ounces Can Black beans, drained and rinsed
• 15 Ounces Can Kidney beans, drained and rinsed
• 2 Tbsp Brown sugar
• 2 Tsp Chili powder
• 1 Tsp Cumin
• 1 Tsp Oregano
• 1/4 Tsp Cinnamon
