Ingredients

• 1 (15 oz) can white kidney beans (cannellini), drained and rinsed
• 1 small zucchini, diced
• 1 red bell pepper, diced
• 1/2 small red onion, thinly sliced
• 1 cup cherry tomatoes, halved
• 2 tbsp extra virgin olive oil, divided
• 1 tbsp red wine vinegar
• 1 lemon, zested and juiced
• 1 tsp dried oregano
• 1/2 tsp smoked paprika
• 1/4 tsp freshly ground black pepper
• 1/4 cup fresh parsley, chopped
• 2 tbsp fresh basil, chiffonade (optional)
