Radiant Spanish Paella with Chicken and Shrimp

Ingredients

• 2 Tbsp olive oil
• 10 grape tomatoes, halved
• 4 bone-in chicken thighs
• 1/2 onion, finely chopped
• 1 green bell pepper, diced
• 1/4 tsp saffron threads, crushed
• 2 cups Arborio rice
• 3 cups chicken broth
• 1/2 tsp turmeric
• 1 lb cooked medium shrimp, deveined and tails removed
• Salt and pepper to taste
• 1/2 tsp paprika
• 1/2 tsp dried parsley
• 1 lemon, sliced into wedges
• 1 tsp garlic, minced
• 1/2 tsp red chili powder
