Ingredients

  • 3 medium acorn squash, halved and deseeded
  • 3 tablespoons olive oil, plus more, if desired (divided)
  • 1 cup unsweetened rice or almond milk
  • 2 teaspoons ground sage
  • 1 teaspoon dried oregano leaves
  • 10 slices of stale, whole-grain bread, cubed (we used Dave's Killer Bread 21 Grains)
  • 4 stalks celery, minced
  • 2 medium yellow onions, minced
  • 1/2 cup shredded carrots
  • 1/4 to 1/2 cup dried cherries or fresh or dried cranberries
  • 2 tablespoons toasted pecans, roughly ground
  • Salt and freshly ground black pepper
  • 6 tablespoons maple syrup or agave nectar
