A delicious dessert with a veggie twist, kept fluffy and moist with grated courgette and delicately flavoured by pistachio nuts.
Ingredients
- ¾ cup canola oil
- ¾ cup sugar
- 2 eggs, lightly beaten
- 2 tsp vanilla essence
- ½ cup pistachio nuts, chopped
- 1 ½ cups courgette, grated
- 1 cup white self-raising flour
- 1 cup wholemeal self-raising flour
- 1 ½ tsp cinnamon
- ¾ tsp nutmeg
