LEMON & PISTACHIO COURGETTE CAKE - Sherry's Kitchen Table

Ingredients

• 125 g plain flour
• 100 g ground almonds
• 1 tsp baking soda
• 1/2 tsp baking powdwe
• 1/2 tsp salt
• 100 ml olive oil
• 125 g soft light cane sugar
• 75 ml kefir or 60 gms of yoghurt
• 1 tsp vanilla bean extract
• 1 lemon, juice and zest
• 150 g grated courgette
• 125 g chopped pistachios
• icing sugar to dust
• handful of toasted pistachios to decorate
• a few slices of lemon or candied lemon to decorate
